Vegetable Sandwich- Easy Recipe

Its Sunday morning! You have to make a special breakfast for all but you don't feel like. What would you do then? Do what I do usually. Make vegetable sandwich but with a different taste! Sandwiches are so versatile- just change its filling and you get a newer taste of it every time. For this sandwich recipe, I have used the simple vegetables generally available in your fridge veg basket all the time and have also used egg scramble to give it a "wow" feel. Vegetarians can always omit the egg part and if needed can add cheese or cottage cheese instead. It can do without any other extra element too- vegetables are good enough to bring the desired taste.

Things Needed for Veg Sandwich
  • Bread Slices - 8 (for 8 sandwiches)
  • Butter or oil- few drops for each sandwich
  • Oil- for preparing sandwich filling
  • Sandwich Toaster
For Sandwich Filling
  • Onion- 1 medium- chopped
  • Capsicum- 1 medium- chopped
  • Carrot- 1/4 cup- chopped
  • Beans- 1/4 cup- chopped
  • Baby Corn- 2-3- chopped
  • Cauliflower- 1/4 cup- chopped into tiny florets
  • Eggs- 2 - scrambled (Optional)
  • Kashundi- 2 tsp ( It is a special mustard sauce like preparation from West Bengal. If you don't get it, use mustard sauce instead)
  • Salt- to taste
  • Black Pepper- to taste

Delicious Methi Paratha!

Methi Paratha
Methi paratha (Paratha is the Indian roti or chapati made with oil) is a delight to have- especially in winters. Methi or fenugreek leaves are the seasonal availability of winters and help keep body warm. This is a very simple recipe that can be had as breakfast, lunch or dinner. Howver, preparing the dough for methi paratha can be a little difficult for beginners but then- where there's a will, there's a way!

What Ingredients are Needed for Methi Paratha?
  • Methi leaves (fenugreek leaves)- 250 gms
  • Wheat flour- two cups full
  • Oil- to fry paratha
  • Garlic cloves- 3-4
  • Salt to taste
  • Turmeric powder- 1/4 tsp
  • Red chilli powder- 1/4 tsp (optional)
  • Green chilly- 1 chopped
  • Water to make dough
These ingredients will give you around eight to ten methi parathas. You can increase them porportionately if you want more parathas.

Spanish Omelette for Breakfast

Spanish Omelette
This is my version of Spanish Omelette...Please check the original recipe for Spanish Omelette if you are a strict follower of traditional cooking process!!

Ingredients I Used for Making Spanish Omelette!
  • Eggs - 4 (I removed the yellow part but you can retain it if you want it)
  • Capsicum- 1 small (diced into tiny square pieces)
  • French Beans- 3 (chopped)
  • Baby Corn- 1 (cut into thin roundels)
  • Spring Onion- 1
  • Tomato- 1 medium(chopped)
  • Salt- as per taste
  • Black Pepper- as per taste
  • Olive Pomace Oil- 1 small tsp for each omelette
All these ingredients together gave me two Spanish Omelettes of reasonable size.
