Vegetable Sandwich- Easy Recipe

Its Sunday morning! You have to make a special breakfast for all but you don't feel like. What would you do then? Do what I do usually. Make vegetable sandwich but with a different taste! Sandwiches are so versatile- just change its filling and you get a newer taste of it every time. For this sandwich recipe, I have used the simple vegetables generally available in your fridge veg basket all the time and have also used egg scramble to give it a "wow" feel. Vegetarians can always omit the egg part and if needed can add cheese or cottage cheese instead. It can do without any other extra element too- vegetables are good enough to bring the desired taste.

Things Needed for Veg Sandwich
  • Bread Slices - 8 (for 8 sandwiches)
  • Butter or oil- few drops for each sandwich
  • Oil- for preparing sandwich filling
  • Sandwich Toaster
For Sandwich Filling
  • Onion- 1 medium- chopped
  • Capsicum- 1 medium- chopped
  • Carrot- 1/4 cup- chopped
  • Beans- 1/4 cup- chopped
  • Baby Corn- 2-3- chopped
  • Cauliflower- 1/4 cup- chopped into tiny florets
  • Eggs- 2 - scrambled (Optional)
  • Kashundi- 2 tsp ( It is a special mustard sauce like preparation from West Bengal. If you don't get it, use mustard sauce instead)
  • Salt- to taste
  • Black Pepper- to taste
How to Make Vegetable Sandwich (with or without egg scramble)?
  • Take all the chopped vegetables except onion and boil them a little with salt. You can do this in microwave oven too. This will take only 2 minutes at 80 degrees in microwave oven. Keep it aside after draining.
  • If using egg, put 1/2 tsp oil in a non stick pan and add the egg to prepare egg scramble. Add a little salt and black pepper.
  • Keep the egg scramble aside.
  • Omit step 2 and 3 if you are not using egg for this sandwich.
  • Wash and wipe dry the pan or take another non stick pan. Put a tsp of oil in it. Add onoin when oil gets heated.
  • Fry onion for a couple of minutes. Add the blanched vegetables to it. Stir fry and add kashundi/mustard sauce, salt and black pepper to it.
  • Check if all the vegetables are tender. If not, put a little (only a little) water and cover the pan. Stir fry and let the water dry.
  • If using egg, add the scramble to it now.
  • Take out the vegetables from the pan and let it cool for a few minutes.
  • Take two slices of bread and apply a little butter or oil on one of their sides. Put a spoon full of prepared vegetable filling on the other side of the bread. Cover it with the other slice of bread with oiled side outwards.
  • Put the two slices- with vegetable filling- inside the sandwich toaster and let it get toasted.
  • If you are using a gas sandwich toaster, keep checking frequently if the sandwich is ready. If you are using electric sandwich toaster, just wait till the light indicator shows green.
Once indicated, you can take out the sandwich from the toaster and serve with your choice of sauce- tomato ketchup, chilli sauce or corriander mint chutney. You can even have it with some more kashundi!
